Beurre Blanc Sauce With Green Peas

Ingredienten: 7 1 Glass Dry White Wine
7 1/2 Glass White Wine Vinegar
7 3 Finely Diced Shallots
7 1/2 Pint Cream
7 1/2lb Butter (Chilled)
7 Tablespoon of Green Peas
7 Lemon juice
7 Salt & Pepper
Voorbereiding:
Bereidingswijze: Reduce the wine, vinegar and shallots to a glaze. Add the cream and reduce by half it volume. Dice the chilled butter and whick into the reduced cream off the heat. Adjust seasoning and add lemon juice to taste.
Keep warm. Add the peas to the sauce just before serving and warm through.
